Like everyone else I cannot believe that it's 2012! Did 2011 even happen. I guess I do have a few memories of 2011 past. I'm gonna recap for my own sanity to prove to myself that 2011 did in fact happen. So here's the top 10 memories that I can recall....some are good and some are sad so you'll have to take the good with the bad....10. My dear, sweet Gigi passsed away. I miss her.9. We conceived and miscarried soon after Gigi was gone (I warned you that these memories aren't all rainbows and unicorns; keep reading it gets better).8. We bought new couches! I know not a big deal, but it is. 2 couches that actually match, and where in fact my husband and I can BOTH lounge! Now you understand, right?7. To help supplement our income I started watching a precious baby girl, named Tessa-Claire. We just love her and her family.6. My baby boy started pre-school! Now that really IS a big deal.5. My baby boy turned 4, and is not gonna be my baby much longer!4. We got a new mattress! Ok, so this maybe shouldn't be so far down on the list, but it has changed our life! It's a KING Sealy memory foam, and sleep has never been better! When Matt and I are done (you know) we don't even have to touch! We curl up on our own side, and wake up without back pain!3. This probably shouldn't be so far down on the list either, but Matt got me the best Christmas present ever.....an iPad! My computer is in the process of having a ver slow, painful death so now I am able to write this blog from my iPad! It is sweet. I am using it now.2. We went on our very first family vacation! We were able to go to Chicago! So much fun, awesome place to stay by Wrigley Field, incredible food, fantastic shopping, and even Lego Land!1. We got pregnant with our baby girl, Evie (eh-vy)! She's due in February; we cannot wait! Ahhhh!Hope you have some memories you can hold onto from 2011 past, and are excited about the coming memories of 2012. I am not big into resolutions; to me they're just made to be broken. Instead I am looking forward to what the Lord is gonna bring in 2012. I know it's gonna be even better then last year! A Pennyless Christmas Gift!

Just thought for those of you non-Type A-ers out there (I guess that would make us Type B-ers) that aren't finished Christmas shopping you may want a "pennyless" idea for a gift this year. Sometimes it's hard to come up with something relatively creative and budget-friendly for those precious people that pour so much time into our children. So here's what we are doing this year for those people; Simms' teachers.
I got poinsettias for $0.98 a piece at Lowe's on Black Friday weekend, but I think they only cost around $2.00 there now. I took off the "fancy", shiny, gold paper around the pot and covered them with material I had on hand, burlap. Also, tied red ribbon around them I also had, and changed the look of them pretty drastically.
Then, with the help of my much-more artistic husband, he drew some gift tags for me in the shape of watering cans.

I cut wooden skewers in half and then simply taped the tag to the stick.

Then I wrote:

THANKS FOR HELPING ME TO GROW THIS YEAR;

ESPECIALLY IN THE LORD!

MERRY CHRISTMAS!

I just have to share this with you.

I walked in to check on our son while he was sleeping last night and couldn't help but laugh.

Simms is APPARENTLY ready for Christmas to get here!

When I tucked him in and we said our prayers he definitely did not have that Santa hat on, but the little stinker must have crawled out to the living room without my knowledge and snatched it! Hilarious! I just love him and I love Christmas!

Long Overdue and You Must Do!

Yes, this is long overdue! I've miss talking to you guys. I have so much to share with you; so much in fact that you'll have to keep checking back with me. I truly have missed you. I've been getting ready for the baby by working on the house, busy with holidays (like everyone and their mother), busy taking care of kiddos, and then sick a couple of different times with that dang stomach bug, and then a stinkin' cold.
Anyways, enough of my excuses. Now I want to share with you something that has changed my life, and could in fact change yours if you need it to.
While working on the house I've been trying to figure out a more efficient use of our space and get organized before this baby girl comes. I guess I'm in "nesting" mode. One of the areas that was driving me insane was my spice shelf in my pantry. I wish I had a before photo, but I got too excited about the possibility of the end result that I lost all my senses and forgot to take one. But to give you a visual, my pantry has wire shelves, and then I happened to have this movable-mini-wire shelf that I used to stack my spices on. It was a nightmare, they were always falling down and I could never find what I needed.
Then one day when I was searching online for a different way to organize my precious spices I suddenly heard the Hallelujah chorus and a bright light shot out of my computer screen (well not really, but you know what I mean) and there they were.
"I have been waiting for you my whole life, " I breathed.
They were beautiful. I had to have them now! I didn't know how I could wait the standard shipping time, but I was going to have too.
"Absence makes the heart grow fonder," I said.
And, "All good things come to those who wait," over and over I thought these phrases.
Then they finally arrived! I felt like a kid on Christmas. I ripped open that package and their they were in all their gloriousness! I could not wait to get to work organizing, and here is the end result.

Aren't they awesome? They are magnetized so they stick right to the refrigerator!

They also have little holes so you can sprinkle your spice while you're cooking.

And also a larger opening for measuring out the amount of spice you may need.

Or you can just take the lid right off.

I simply labeled each one with a fine point sharpie.

I absolutely LOVE them! They're all right there on the side of my refrigerator right beside my stove. It's just perfect! I get a tear in my eye just telling you about it.

I found these little beauties on www.pfaltzgraff.com. Do yourself a favor and go get these. Or get them for someone else in need. Christmas is right around the corner, and it could make a nice gift for the chef in your life. Like a basket filled with some cooking supplies, some nice spices, and these great containers would make a really thoughtful present.

I'm so glad we had this little chat. I guess it was a little one-sided, but I had to tell you about this life-changing product! Thanks for always being such a good listener.

It's a....

Just wanted you to know that pinks and purples, probably a little drama, saving for a wedding, and melting Momma and Daddy's heart is in our future. We are having a baby girl! Now that Simms knows he was right about having a baby sister he is pretty stoked; as much as a 4-year-old can be anyway! He was confused about the ultrasound pictures, and was kind of worried about the way she looked, but I reassured him that she is growing healthy in Momma's belly.

This morning as we watched her through the tears and laughter we saw her flipping and showing off, sucking her little fingers, and one time looking right up at us. All I could say under my breath was praise the Lord, praise the Lord, PRAISE THE LORD!

After Matt wiped his tears he said that she already pretty much owns him; heart and all! I have a feeling she is going to be a "Daddy's girl"; wrapped right around his little finger.

Yep, she already owns us!

Perfect Summer Ending

Since we planted our garden a little later than usual we just now have our tomatoes coming in. So what better way to end summer then with a tomato salad straight from the garden with herbs. This salad is so easy you could make it with your eyes shut. You could make it with your eyes shut while chewing gum and riding a bike; seriously. Plus it's ultra "pennyless" especially if you have a garden with tomatoes and herbs. Here it is; the perfect summer ending.

Tomato Marinated Salad*

Ingredients:
8 oz grape tomatoes, sliced length0wise
1 bunch basil, chopped
5 sprigs chive, chopped
1/4 cup balsamic vinaigrette
1/2 cup extra virgin olive oil
2 tbsp brown sugar
salt and pepper, to taste.

Directions:
Slice tomatoes directly in a bowl. Add basil and chives. In a small jar add rest of the ingredients and shake till you can't shake anymore. Add half of the dressing to the salad. Let it sit in the refrigerator covered for a couple of hours before serving.

The tomatoes are finally growing!

Chop up the fresh tomatoes and then use kitchen shears for the fresh chives (those are from the garden too!)

Fresh basil, from the garden of course! You can use the kitchen shears here as well.

Throw in the herbs with the tomatoes.

This is the magical ingredient.

Pour into a small jar.

Add the oil.

Next, the brown sugar.

Salt and pepper, then prepare to shake what your Momma gave you!

Shake your money maker!

Gently toss together with the vinaigrette.

The perfect accompaniment to pretty much any dish.
Amen.

Am I The Biggest Loser?

Does this make me a loser? I don't know if I really want you to answer that. But I have been asking myself that question since the new Fall line-up of the television series has begun. I think I may watch too much TV. I was in kind of a funk ever since Friday Night Lights ended so TV shows haven't been on the forefront of my mind, but last night I dreamed a version of Glee and Parenthood; don't really know how it turned out, but I do know that I might be a little obsessed.

Here's all the shows I've started watching or am planning on watching or I'm dreaming in. Don't judge....

It's sad, but I have really been looking forward to this!

A Soupy Kind of Day

This recent weather has inspired me to take out my soup pot and start simmering. Fall finally seems like it's arriving. My air-conditioning has been turned off and windows have been pushed open. Cool, fresh air has blown in and leaves are beginning to fall causing branches to be exposed in all of their nakedness (hehehe I know I'm immature).

Another season is making an entrance.

I love soup and for some reason with this pregnancy it has heightened my taste buds to want soup that much more, but with the hot weather I just haven't been able to stomach it too often. Today because I have been in my WKU sweats and snuggled up in my Slanket (yes, I have a purple one and I am not ashamed of it); soup is what would be the perfect finish to this day.

I can't wait for you to try this on a day when you're all comfy in your sweats or maybe even when you come home exhausted wearing your power suit.

My dear friend April introduced me to a version of this soup and I hope you share this version with your friends.

Taco Soup

Ingredients:

1 tbsp extra virgin olive oil

1 pound ground turkey, browned

1 red onion, roughly chopped

1 small bag frozen lima beans

1 can black beans

1 can kidney beans

1 can light red kidney beans

2 cans Rotel, original

2 tbsp cumin

1 tbsp oregano

1 pinch red pepper flakes

salt and pepper

1-2 cups water

Toppings:

tortilla chips

sour cream

shredded cheese

Directions:

Add oil to a large, soup pot on medium heat. Add onions, cumin, oregano, and hot pepper flakes. Cook until onions are caramelized. Add remaining ingredients and bring to a boil. Then turn down to a simmer for 30 minutes to an hour. Mmmmm I can smell it cooking now. Serve in a soup bowl and top with broken tortilla chips, cheese of your choice, and a dollop of sour cream.

Caramelize the onions and add all the spices.
Sorry for the eery darkness; my stove light is burnt out.

Brown the meat.

Add all the beans.

Add water and bring to a boil. Then cover and simmer till it is spoon worthy.

Top with tortilla chips, cheese, and sour cream.
Mmmmm I love this simple, yet satisfying soup!
And not to mention it's "pennyless"!

So after a longer hiatus then anticipated; I'm back. No I haven't dropped off the face of the planet. No I haven't come down with some mysterious disease. No I haven't decided to stop blogging about "the pennyless" life and all that it entails. Actually, that's the reason I have been M.I.A. because "the pennyless" life has had some recent action (no, not that kind, well sort of, just give me the chance to tell you). We are (wait for it) EXPECTING!

Now for some reason the last 14 weeks have been WAY different then when I was pregnant with Simms, in my opinion. My husband disagrees; so maybe I suppressed all those weeks from my memory, but I feel like I have been run over by a truck, morning sickness like I've never experienced, and sometimes barely able to make it through daily chores and activities, but it's getting better. I'm saying this not to complain, but just to say that is one of the reasons for my absence. Thankfully energy is increasing. So here I am to share this with you!

Some friends have said that maybe this increase in sickness is because it may be a girl, which I will gladly endure any pain to have the LORD bring a sweet little girl into the world. Something about the same type of hormones battling each other so I've been told.

Now, I know everyone says, "Oh it doesn't matter as long as it's healthy." And there is gobs of truth in that, and with having a miscarriage in the past like we have, anyone who has been through that can tell you that your perspective of life changes when you go through something like that. Priorities change. God giving us or anyone a child, in anyway, is grace that cannot be explained.

Now, by His unfathomable grace He has given us a priceless gift in Simms who just recently celebrated his 4th birthday. So on one-hand I could see God's practical plan in giving us another boy, which would be amazing and fun, but especially after caring for a baby girl out of my home the past several months, I do desire to have a girl, and I am not ashamed to say that I have a small amount of hope that maybe this will be a girl.

But, we'll see.....either way.....

This is God's grace in my life. I sweet and active growing boy!

Dip, baby, Dip!

Sometimes I crave chips and dip. So sue me! I know it's not healthy, but that salty chip dipped in a cool, zesty ranch dip just hits the spot. Instead of buying that ranch mix pack from the store you can use staples that you probably have on hand to make a fresh and way more delicious ranch dip then you could ever make with that prepackaged kind.

This dip is so easy and so delicious with the help of a surprising ingredient, and of course the help of your favorite store-bought potato chips!

Orange You Glad You Made This Dip

Ingredients:

1/2 cup milk/buttermilk

1 cup mayonnaise

1/2 cup sour cream

1/4 tsp dill, finely chopped or dried

1/4 tsp parsley, finely chopped or dried

1 tbsp chives finely chopped

1/8 tsp garlic salt

1/2 tsp orange zest

pinch of salt

cracked black pepper to taste

Directions:

In a medium mixing bowl combine all ingredients. Whisk well. Pour in a container and seal tightly for at least 6 hours or overnight. This will help it to thicken and enhance the flavor. Serve with your favorite potato chip and (to make you feel not as guilty) baby carrots. So good!

Measure out your milk. I used skim because that's all I had on hand, and that's ok!

Use what you have.

Don't buy buttermilk just to make this dip. I repeat save your money and time.

Unless you want to use buttermilk, then nobody's stopping you!

Pour milk in your mixing bowl.

Next, add sour cream and mayonnaise.

Then the chives.

Next add your parsley, dill, salt and pepper.

Add your garlic salt. Then the surprise ingredient....

Orange zest!

Yep, you heard right!

This gives the dip a nice, fresh hint of citrusiness (I know, I don't think that's an actual word), but just go with it.

It makes it taste good, ok!

Whisk well.

Until combined.

Pour in a container that can be sealed tightly.

Stick in the fridge at least 6 hours or overnight. Try to resist dipping a chip in it!

It's tough, but you can do it. It will be worth the wait. I promise

Really, I promise! Have I ever steered you wrong?

Well, don't answer that.

In all of the delicious excitement I forgot to take a photo of this dip being served.

Just trust me, serve this up with chips and carrots and it will be gone faster then it took you to make it! It did with us!

Extremely Real Couponing

I have always HATED couponing. Along with doing the dishes it is the one thing I dislike doing the most. I would stay up into the wee hours of the night organizing and agonizing over all the the different sales at all the different stores. I would wear myself ragged the entire next day hitting up all the different stores that have the best prices for the things I need on my grocery list. Then checking out would be a drudgery. I would hand the cashier my coupons as beads of sweat would form on my brow; then more sweat would drench my armpits (gross, I know, but it was stressful for me). Then as the total would ring up I would almost faint when all the hard work would total like $13! So eventually I gave up. It just wasn't worth it to me.

This was like a year ago; until I was introduced to www.southernsavers.com. This little gem does all the work for you, well Jenny really does it. It's not the Extreme Couponing way, but in my opinion it's the realistic way. She breaks it down for you so easily and teaches you along the way. I now know that when I walk into the store that whatever I am buying is the best deal possible at the rock bottom price. Its glorious!

Now, I have always been impressed when people pay literally like a $1 for hundreds of dollars of goods, but when you actually look in their cart it's ironically tubes and tubes of toothpaste and two liters of cokes, which is fine, and it's a sure fire way to make sure your teeth don't rot out from the coke, but now you have to go shopping for actual food so your family can eat!

If you follow Jenny's advice you're gonna get what you actually need. It also truly takes out all the guest work and dare I say it, but grocery shopping and saving money can be fun again!

Here's how I'm doing so far....

God just didn't make me to do those giant binders of coupons so I took the simple route and just got a small 12 folder accordion file. Than labeled each by the way stores are typically organized. I also have a miscellaneous and restaurant section.

I also try to check her site a couple times a day because it is constantly updated with deals, and most of the time you can print off the coupons directly from her site by clicking on a particular link.

Oh, and one more thing, if you don't the get your local newspaper in the mail make sure you go by a couple of papers every Sunday. I sometimes forget, and I'm kicking myself when I check her site for the deals and realize I don't have the coupon to get the ultimate savings because it was only in the paper.

Happy Father's Day!

Just wanted to share with you the daddy's in my life. I love them.

Here's Daddy and son enjoying the St. James Art Fair in Louisville.

Simms is being a goofball as usual, which I happen to love, MOST of the time.

That's Matt's dad on the right, whom I lovingly call Paul (shocker since that's his name; he's the best!). He's eating lunch there with his sister whom we lovingly call Aunt Linda (she's also the best!).

Paul is one of the most huggable dads you will ever meet and when he smiles his whole face smiles.

He's always there for us.

I love him so much.

He is a sweet and thoughtful man that I am forever thankful for.

He is a great gift.

Now I LOVE Pdub a.k.a. The Pioneer Woman, and she does not need any help from me to promote her; I don't think she's ever needed any help from anyone promoting her because of her incredible blog that now 4 million some-odd people follow. I'm saying this because she inspired me, as she does almost daily. She inspired me this time to go buy this huge glass drink dispenser that I have always wanted. Ever since I've become a big girl and started having people over for dinner or just to hang out, I have wanted these beautiful things. I know some of you may think that's weird, but it's the truth. I've always wanted it, but could not justify buying them because they're like $50 or more.

Pdub recently posted about the glass drink dispensers that she owns from Pottery Barn. Now I like Pottery Barn a lot; I mean what's not to like, but this is The Pennyless Cook; emphasis on the "pennyless" so I went on a search to find some affordable versions on www.amazon.com. The cheapest I could find was $18, which I could swing, but I wondered if I could find them even cheaper so I decided to wait on buying it.

The other night I had to pick up a couple more things that I forgot at Kroger and behold, like a sign from the LORD were those drink dispensers, not exactly the same, but perfect for what I kind of needed (if you can "kind of need" a drink dispenser, that is).

Plus, they were on sale for, wait for it....

$14.98!

Yep, you heard right, $14.98 I couldn't believe it either; so I got 2!!! Now this sale was with my Kroger Plus Card. If you don't have a Kroger Plus Card I will pray for you because it's like the easiest thing you can ever do to save money at Kroger and plus (no pun intended) you can load digital coupons on it too.

I don't know for sure how much longer this sale will go on so if you "kind of need" these beauties like I did; go get 'em. Now; go! I don't mean to be so bossy, but they only had like 8 left at my Kroger.

Wasabi Please

So I just discovered Wasabi Peas. Have you heard of them?

I've been on vacation recently (more on that in a later post) and my vacation, according to myself officially ended last night because I had to go to the grocery. Back to the daily grind; so-to-speak. We got back from our actual "vacation" Friday night, but continued our vacation back at home by eating out some and I (thanks to Matt watching Simms for most of the day, and a gift from my Daddy) got the most luxurious treatment at Physicians Center for Beauty on Saturday morning. But you don't want to hear about that.....oh you do! Well, then let me tell you....

I don't mean to brag, (well, maybe I do just a little) but I got the best massage of my life; a hot stone massage, then a facial which I had never had, then a body scrub which I had never had either, and then a gentle wave treatment which I had never even heard of! It's like 37 seconds of the brightest light ever (except for the light of the Christ Himself) that you stare at, with your eyes closed (if you can stare at something with your eyes closed that is) or you can get, according to Stephanie (the massage therapist) massive migraines. Anyway, this light is supposed to tighten skin, kill bacteria and heal blemishes. Definitely needed the healing of the blemishes part, and it worked!

Ok, now back to my point..... in between the facial and the gentle wave treatment I had time for a snack. I chose to get a salty, spicy mix of healthy nuts and crackers, but it also had, those Wasabi Peas I mentioned. So I ate my snack and sipped on my cucumber water, and got the most delicious flavor from these so-called Wasabi Peas.

I found some at Target last night during my grocery trip, and for a snack this morning I decided to eat a handful. BAD IDEA! The worst idea I have ever had, except for that one time in middle school where I roller bladed down a slide and broke my left arm in two places. Not kidding; that really happened!

These little harmless-looking, dried green peas sent a pain down my throat and through my sinuses that I have never encountered!!! I started jumping around like a possessed bunny rabbit, which didn't do any good by the way.

And I DO know about Wasabi because I eat it with my sushi, but sheesh there should be a warning on the label that says:

EAT WITH CAUTION!

DO NOT EAT BY THE HANDFULS UNLESS MOUTH IS NUMB!

But it didn't say that so I thought it was all good. I seriously thought I might have to take a trip to the hospital for the 15 seconds that my mouth was on fire!

But all in all those little bits of fiery goodness are delicious.....if I eat like one or two at a time.

I think I'm gonna make a mix with them, like with bagel chips and pretzels similar to what they served at the spa. Mmmmm that sounds good......

My Miracle in a Bottle

During that infamous Wal-Mart run not only did I get $50, and find an incredibly affordable shampoo for myself, but I also found a shampoo for my husband Matt.

Let me first say, so my husband's man-hood is not completely stripped away from him, that Matt IS manly. He played football for a championship team in highschool. He plays an electric and acoustic guitar. He has started boxing. He even (with our friend Travis' help) ripped a huge tree out of our front yard with his bare hands a few days ago. Well, not really, that story kind of got elaborated, but they both did rip a massive bush out of our front yard with the help of some rope and our Jeep.

Matt is also good-looking, and when he sings I still sometimes melt like butter. I know gag me, but it's true. And he even has dance moves that might surprise you, and actually won my heart at a sorority dance (that's another story though).

Now, with all that said; he does have little moments of what might be considered "unmanly".

For instance, he likes hair-product. He has good-hair and is not ashamed of it.

So because of this we have bought hair products galore to satisfy this head of his.

He also has a dry scalp. I hope he doesn't care that I'm sharing this.....too late now, I guess.

So the last 5 years we have tried a million different top salon men products. From shampoos to scalp treatments; they all leave his hair with too much build-up.

Keeping all that in mind, I noticed when I was shopping, the new natural professional line by Suave. I've always had good results with Suave products myself so I thought, what the heck, my husband's hair isn't too good to try Suave! And it may just need to get over itself if it thinks it is.....

It's time to bust out the grill and all the fixin's that embodies cookout season. This is one of my favorite times of the year. Good food with good friends in the sun. How can you not love it? Well, I guess if it's 110 degrees and no water source in sight than that would not be fun, but other than that it's one of the best times of the year!

Usually this is also the time that I pack back on those 10 pounds that I've been losing and then gaining and then losing again at the gym during those cold, winter months. Let's not bring up winter. I know you didn't; I did, but let's just stop talking about it because it can be depressing. Warm months are ahead!

Speaking of warm months; it used to take me forever to figure out something to bring as a side dish to the different cookouts that wasn't your same 'ole potato salad, slaw, or baked beans. Not that there is anything wrong with those. Believe me I still eat it all......hence the 10 pounds that comes and goes!

The perfect side (in my humble opinion) is one of my very favorite pasta salads. It's super simple, and super-duper yum-my as my 3-year-old says!

Tomato, Asparagus Bowtie Pasta Salad

Ingredients

1 16 oz package Bowtie pasta

1 lb fresh asparagus, cut in bite-size pieces

1 bottle Italian vinaigrette (I use Girard's Olde Venice Italian)

1 oz fresh basil, chopped

1 lemon for zesting and juicing

1-2 cloves garlic, finely chopped

1 pint grape tomatoes, halved

1 cup fresh, grated Parmesan cheese

salt & pepper to taste

Directions

Cook pasta according to package directions. Add asparagus to the cooking pasta the last 2 minutes of cooking time. Drain pasta and asparagus. Let cool for 10 minutes or longer in a large serving bowl. Add your tomatoes. Zest your lemon over the pasta, asparagus, and tomatoes.

Whisk 1 cup of Italian vinaigrette, basil, garlic, and juice of one lemon in a small bowl. Pour dressing mixture over the pasta salad and 1/2 cup of cheese. Add salt and pepper to taste. Stir well, but gently so not to break the pasta.

Cover and chill for at least 1 hour or overnight.

Before serving, stir in remaining dressing, or about 1/4 cup, cover top of the salad with remaining 1/2 cup of cheese.

Then don't wait any longer, dig in!

Here's the choir that will make melodious flavor.

Boil your water.

If you don't know how to do that, no offense, but you may not need to be in the kitchen for the safety of those around you.

Pour in your pasta to boiling water, and then get a steam facial.

It definitely helps with opening up your pours. Now go use a facial exfoliator and finish with a good moisturizer.

You have like 9 minutes before your pasta's ready.

While you're getting the facial, multi-task; stir your pasta so it doesn't stick and it begins the cooking process evenly on each noodle.

Cut your asparagus in even, bite-size pieces.

If you don't like asparagus; I will pray for you.

Pour your asparagus in the pot with the pasta.

Cook the asparagus the last 2-3 minutes of the pasta cooking time.

Don't they look happy swimming in there?

Drain and let cool in your serving bowl.

DO NOT RINSE. I repeat DO NOT RINSE, you want all that starchy-goodness left on the noodles to soak up the dressing. You will make the pasta extremely irritable if you rinse it.

They just don't like it; I'm telling you from experience.

The grape tomatoes are waiting patiently.

Half each one.

Dump in the tomatoes with the pasta and asparagus.

Zest your lemon.

This is one of the stars, Girard's Old Venice Italian dressing.

You can use any basic Italian vinaigrette, but this is my go-to, and plus it is currently on sale at Kroger.

Add lemon juice to 1 cup of dressing.

Chop up fresh garlic.

I usually recommend using the jar because it is cheaper in the long run, but when you incorporate in a dish raw, always try to use fresh. It packs some big flavor, and you can taste the difference.

Plus, it was only a little over a dollar for two heads of fresh garlic.

Add the garlic to the dressing.

Cut the fresh basil; FRESH basil.

Add it to the dressing.

Whisk.

Pour over the salad.

Ohhhh this is gonna be good!

Stir well, but gently so not to break the pasta.

You want it to look purty.

See, purty isn't it?

Shred your Parmesan cheese.

Buy the block.

It's cheaper ounce per ounce, then the pre-shredded, and packs more flavor.

But, I won't kick you out of the kitchen if you buy the shredded.

Me LOVE cheese!

Pour in a 1/2 cup of the cheese.

Oh yeah, and a little salt and pepper.

Go easy on the salt because Parmesan has a salty-bite to it naturally.

Mix gently.

Gently I said!

Then cover and chill for at least an hour or overnight.

Pour on the remaining dressing right before serving, about 1/4 cup.

Also, right before serving, cover the top with the remaining cheese.

Serve with your favorite cookout food.

See that yummy burger, well that photo reminded me what I learned from our friend Bill.....

The key to a perfect burger is not only the meat, but the bun.

His secret: buy your buns from WW Cousins. If you live where there is no WW Cousins then you will truly never have a perfect burger.

And I will pray for you again.

Wal-Mart and the phone call from Dawn

I just, today, got a call back from Dawn. You know, the Wal-Mart manager of the store where I had a horrible, terrible, no-good very bad day (by the way that's one of my favorite children's books).

I wanted to give you guys an update.

Here's how our conversation went.....

"Hello," I answered

"Hello?" said Dawn

"Hi, this is Megan McDougal...." I said

"*crickets* *crickets*," on her end of the phone.

Dawn, you are the one who called me. Remember?

"You know, the one who wrote a letter about my experience at Wal-Mart?" I questioned, my heart pounding.

I hate confrontation, but I'm just hoping she will offer me a shopping spree of some kind. Even though right now I am not venturing back into that store ever!

"Oh yea......I just pressed redial on my phone when I saw the missed call," she explained, "remind me again what happened."

Oh great! This is going to go well; I can already tell.

"Well, it was a pretty terrible experience," I explained, "I found a big hole in the bag of frozen chicken, moldy cheese, cucumber that was bad when I got it home...."

"Oh that's right," she interrupted, "I was really surprised because I've never had a meat complaint!"

Well maybe not to your face....

"Well, I hate that I had to complain, but really just wanted you to know the facts, and....." I said.

"Now, do you remember who you spoke with?" she asked.

"No, I didn't think to look at his name tag, but he was stocking the bananas," I said, "Oh, and he had gray hair."

"Oh I think I know who it is...." she said.

Sheesh! I hope you are never an eyewitness to a big murder case because is that really enough information to go by before you convict somebody?

If you really do know who it is please don't fire the old guy or even yell at him. It's not really his fault; unless there's some kind of protocol you all have that he didn't follow; then you can remind him.

"Well, really I just wanted you aware of the situation so you can fix it, and I will probably never...." I said.

"Is there anything I can do for you?" she asked.

Ummmm, yes please! A $5,000 shopping spree will do the trick, at your best Wal-Mart in the country, and you can pay for air-fare and a one night stay at a five star hotel in the area, as well.

"Well....." I started to say.

"Do you know when the next time you will be back?" she asked.

"Really, I have no clue," I said, "I don't think I ever....."

"How about this I'll leave you a $50 gift card at the customer service desk and you can pick it up the next time you're in," she said.

Sold, I guess, can't you make it $100 at least?

"Thanks so much," I said.

"Thank YOU and if you EVER need anything or have anymore problems please let me know," Dawn said, "we appreciate you and your feedback."

"Thanks, I will," I said.

Don't worry, Dawn I definitely will, but after I pick up that gift card I don't think I will have anymore problems because I probably won't be back. More than likely. Well, I wouldn't stake my life on it.

"Good bye!" she said.

"Bye!" I said as I hung up.

Gosh I am so easy. $50 is like giving me $0.50 compared to the amount of cash flow Wal-Mart has coming in!

But I will take it! You better believe it! There ain't no shame in that! And that was still nice; she did seem like she cared, and $50 is $50 to the McDougal family not $0.50!

Still a happy ending, considering.

So I went to Wal-Mart the beginning of the month for my monthly shopping trip; I only spent $90 which is one of the best monetarily speaking experiences I have had there, but overall experience I give it -98%. That's negative 98% for those that read that too fast and are now confused. Why not negative 100% you ask? Well because I did save money, and that's how Wal-Mart sucks me in that door because it's the cheapest and also because of this ridiculously, awesome product I found (which you may be able to find other places; Wal-Mart is just where I've seen it).

I'm not gonna go on a tangent about my shopping experience. Nope, I won't. You can't make me.

Well maybe I will; just a little one.....

The block of cheese I picked up was covered in mold, they were out of my red onions which I specifically needed for a salad I was making the next day, every bag of rice had holes in it that I picked up, the only cumin they had left was dented, and the bag of frozen chicken had a hole in it the size of my fist. I hate to complain; really I do, I know it doesn't seem like it because that's what I'm doing, but sometimes you gotta face "the man" and stand up for what is right!

So I found the most important looking man I could, and told him in an even tone, what a lovely experience I had been having (no, not really, you can imagine what I said, but there was no yelling involved; promise).

He looked at me for a minute, like a deer in headlights, and said, "This has just been a terrible day for you in here hasn't it." *crickets* *crickets*

"No, duh!" I thought, taking deep breaths to remind myself to have self-control, and said, "Here, let me show you what I mean," and then I proceeded to take him around the entire store to show him, of course, what I meant.

I get it. Everybody has a bad day; I have plenty of them. People close to me can tell you that, but then you apologize and go on and try to fix what you might have messed up; then do better the next time. No discounts were given, or apologies handed out. That was it.

Why didn't you just leave your cart and walk out you ask? Well, because I had already been in there an hour, with my 3-year-old, who was ready for dinner and bed. And I think all we had in our refrigerator at the time was ice cubes, frozen strawberries, frozen peas, and plain yogurt. I guess I could have gone home and made a strawberry-pea smoothie for dinner, but would you?

Now I am not completely dissing every Wal-Mart; this was the Wal-Mart closest to my house. And thanks to my friend Bonnie's encouragement, I wrote Wal-Mart a letter this past week and already got a call from the manager answering my letter.

When I call her back I'll let you know what happens.

Phew! Thanks for listening.

Now for the real reason I wrote this post. The ridiculously, awesome product that I found on this most recent trip is Simply U. It's shampoo.

I use the Volumizing, 'cuz may hair needs help in that department. Okay, I'll say it, it's fine and limp, there.

This shampoo has quickly become my new favorite. One big reason is it's $5.47 for 25.4 fl oz! I also love that it's in a big, pump bottle! Plus it's Sulfate and Paraben free, pH balanced, and contains vitamins and antioxidants (I'm starting to sound like a commercial). And it smells like palm trees, sun, sand, and the ocean (I know I could've said beach, but it doesn't smell like coconut suntan lotion-you know that smell you automatically think of. I love the beach by the way). I guess the intoxicating, but not-overpowering smell is because of the Euterpe Oleracea Fruit Extract, also known as the Acai palm, which is a species of palm tree in the genus Euterpe cultivated for their fruit and superior hearts of palm (yep, that's right, I'm pretty much a genius).

Okay! You got me; I looked it up. Sheesh.

This natural shampoo also doesn't take five hundred pumps to produce a good lather, like other's I've tried. It's two pumps and that's it! I'm tellin' you, you gotta try it.

I noticed on the shelf they also carried Moisturizing, and they claim that this shampoo is gentle-enough even for permed or color-treated hair, as well.

Your hair will thank me for sharing this with you.

Renewal

This past Friday I was extremely blessed to experience the renewal of vows between two sweet friends. My breath was taken away by the beauty of the church lit in candlelight. As the church filled with song you might've thought in that moment that there is nothing more glorious, but after hearing the beautiful and difficult journey this family had been on, and the way God has graciously healed and blessed them; His work amidst lives is much, much more glorious!

As these two were renewing there love for one another; I was taken aback by the fact that God is constantly renewing for our good and His glory!

God has been renewing me for the past several months. I've felt like I've been riding a roller coaster, if I'm honest, since January. I would go down in a pit and then He would pull me back out; till recently.

During this time God has used the wise and encouraging counsel of dear friends and even my husband (I know it may be shocking, but Matt is my wisest and bestest friend in the whole-wide world). He, God that is, has also opened my ears to His Word, and used different songs to point me towards Himself. He has constantly pursued me during this time till I finally listened and said, "Ok! Ok! I hear you! Yes I want to be near you now with my entire heart, not just a portion, and thank you for not giving up on me! I do love you, I'm sorry for not always showing it, and thank you so much for always loving me!"

I just wanted to share with you that I am so incredibly thankful that He doesn't give up on me and He won't ever give up on you either! His love sustains, provides, protects, and still believes when I, or even you may not!

This song has been on my mind ever since I witnessed God's merciful, joyous, and gracious hand on that precious family; that simply wanted to share what God had done between two hearts that He had brought together two decades ago.......

Yea, it was harder then we thought it would be and it may get harder, but that's what the Promise is for.

I need to remember that when I forget.

Momma's Day

I LOVE Momma's Day!

O let me count the ways.....

1. It's the one day I don't feel guilty asking my husband for a back rub.

2. I really don't have to lift a finger around the house, unless it's to drink my favorite, made-for-me cup of coffee.

3. I know, without a doubt in my mind, I am appreciated and what I do as a stay-at-home mom is, in fact, important (I know; I'm getting sentimental).

4. Just the fact that I am a "Momma" to someone is truly the most precious gift, besides my husband (I gotta make sure and throw that in there somewhere *wink* *wink*), that Christ can give me outside of Himself.

*tear* *sniff* *tear* *sniff*

5. Speaking of gifts, it's an excuse to get them!

Here's what my sweet family got me.....

No this is not a joke.

I seriously have been wanting some since watching this season of Biggest Loser.

And there's the little fact that I get to take out, every little bit of frustration from the day in the back yard, on my husband.

Yep! You heard me right.

Now calm down, there's no reason to lock me up and throw away the key.

That's what Matt got these lovely things for. They're pads that he holds while I punch the fire out of them. If you saw me you would never, ever want to mess with me.

I mean, I pretty much look like Rocky, Jr.

Well, actually, my neighbors are getting some free, comedic entertainment.

Not funnier then The Office, but close.

It's WAY harder then I thought it would be, boxing that is.

Kind of like being a Momma, but totally worth fighting for.

Granola that May Send You to Rehab

Ok, get ready to never go back to store bought granola. No, I'm telling you you won't be able to simply go to the grocery store and pick up a box after you try this. What? You say it's so much easier. Well, maybe but you can make a ton of this stuff and freeze it if you want. It's cheaper, probably healthier, and I'm telling you right now it does not compare to anything you can buy at the store. This stuff is ridiculously good. Addicting even.

Yes, granola can be addicting when it tastes like this! You may have to go to rehab.

Granola Goodness

Ingredients:

1 large egg

1 large egg white

1 cup light brown sugar (for a healthier version 1 1/2-2 cups honey)

1 tbsp canola oil

1 tsp ground cinnamon

1/4 tsp salt

1 tsp pure vanilla extract

1 1/2 cups toasted oats

2/3 cup dried cranberries

1/4 cup chopped pecans

1 tbsp all-purpose flour

Directions:

Preheat over to 325 degrees. Cover a baking sheet with aluminum foil or wax paper. Coat with cooking spray.

Whisk egg and egg white in a large mixing bowl. Mix in remaining ingredients. Spread evenly in prepared baking sheet.

Bake until golden brown, about 30 minutes.

Break up granola into clusters and serve over yogurt with fruit or if you're like me eat it by the handfuls!

Tip: If you double or triple this recipe (which I recommend 'cause this stuff disappears fast) bake an extra 5-7 minutes.

Here's the chorus line of goodness.

Whisk the egg.

If you have little helpers I highly recommend putting them to work.

Then add the brown sugar.

If you wanna go the healthier route, use honey, but you will want to double the amount compared to the sugar.

Honestly, I would try it with the brown sugar first time you make it.

You don't want to be too healthy do you?

I hate to say it, but it's just better with the sugar.

Add the oil.

A little bit of salt.

Vanilla.

The real stuff.

Amen.

Stir some to incorporate.

Measure out your pecans.

Chop 'em up.

Chop 'em real good.

Add the nuts and the flour.

Pour in those oats.

Mix in the cranberries.

Stir really well.

No need to go to the gym after this; your biceps will already get enough of a workout in.

Line your baking sheet with foil and coat with cooking spray.

Really coat it good, or you may have to wrestle the granola off the foil and pan, which is not a pretty sight.

Believe me.

Pour the granola on the prepared baking sheet.

Spread evenly.

Bake at 325 degrees for about 30 minutes.

Cook to sweet perfection.

Serve.

I can never resist!

Happy Birthday Suit

In honor of my husband's 29th birthday I made him his favorite; chocolate on chocolate. Typically I would make him brownies, which tend to be his number one request, but I think his favorite brownies have quickly become a thing of the past ever since I sang him Happy Birthday over The Best Chocolate Sheet Cake. Ever. Thanks to The Pioneer Woman I was able to give Matt the perfect birthday present wrapped in a layer of chocolaty ridiculousness. Even if there's not a reason to celebrate, make this cake and it will give you a reason to.

This cake seriously (as the name states) is the best dang chocolate sheet cake you've ever had. It's rich and melts in your mouth. It's moist and smooth. It also goes perfect with a tall glass of cold milk, which I suggest you have on hand. It's also perfect for the Pennyless since it's made with practically all staples. It's also super healthy ( Yeah right! Bob and Jillian would not approve of this at all) and super easy, no really, it is! Well, it was super easy until I ended up making chocolate cupcakes first instead of the actual cake, and I had to strip down to my intimates in the middle of the kitchen (more on that later). No I wasn't making a video for my husbands birthday wearing only my birthday suit (I told you more on that later; get your head out of the gutter!).

Here's the chorus line.

Melt the butter.

Add the chocolatey goodness.

Mix real good.

Add the boiling water. Don't know why; you'll have to ask Ree.

Mix the dry ingredients.

Add the chocolate mixture to the dry and gently stir to cool.

Now it's time to mix the buttermilk.

Add your vanilla. Don't you dare use that yucky immitation stuff.

Add the baking soda.

Add the whisked eggs.

Mix well.

Add to bowl with batter mixture.

You only have to dirty up one mixing bowl!

Mix really well.

Grease your sheet with the wrapping from the butter.

This is definately the Pennyless way.

Add the yumminess to your greased baking sheet.

Just please don't let this happen to you!

You don't want to know what I said when that baking sheet dropped out of my hand, onto the floor, and all over the front of my clothes.

I had to completely strip down because of the mess that was made!

Mad does not begin to describe what I was feeling.

But then Simms and I decided to eat some of the batter and make cupcakes with what was left.

Yes, that smear on the floor that looks like it's from a finger; is exactly that! Judge me if you want, but I just really didn't care at that point to let Simms do just that. I know gross, but he thought it was awesome! And it made me laugh!

So I started feeling a little better, and that's when I decided to get out of my chocolate drenched clothes.

On a positive note: I did smell ever so good for the rest of the day.

So then it was time to put on some sweats and wipe the chocolate off my face to make the frosting!

Melt the butter. Yes, more butter, it will be okay it's a special occasion.

Add the chocolate.

Add all that sweet powdered sugar.

Mix well.

Add vanilla. Remember, the real stuff.

Add the milk.

Measure out your pecans.

Chop.

Chop. Chop.

Stir in the nuts.

You're a nut.

No you are!

Beautiful!

Let it boil for a few seconds.

Here's the cake round two!

Cooked at 350 degrees for only 2o minutes.

So easy. As long as you don't drop it all on the floor.

Pour on that delicious icing on the warm cake.

Pour over as evenly as possible and it will do most of the work itself.

Here's the happy mistake!

I cooked these for 25 minutes.

I used the leftover frosting.

Seriously The Best Chocolate Sheet Cake. Ever!

So good!

Take a bite and wash it down with a glass of ice cold milk.

On Sunday a King!

I felt like I was kind of preaching at you yesterday. Now, what I said is true and is what I believe completely in my heart, but that belief may not always be so clear to others and even to myself at times. I wanted to say what I said yesterday. God moved me in such a way to share that truth, but now I want to get real about my life.

Now with that off my chest (phew!), last night I was reminded, after we read John 19:28-42, that I tend to act like He is not King of my life. Just as Joseph of Arimathea did. Joseph was scared of the Jewish leaders so he was a disciple of Christ in secret. He loved the Lord, yes, but was not vocal to others about it out of fear.

Many days this unfortunately sums me up. I care and fear too much about what others think about me rather then to have Christ the King of my life, unashamedly. Now this aspect of fear in my life probably plays out completely differently then how it did in Joseph's life. I want others to like me and like all the things about me, so in turn, certain people and material things tend to define me. Those defining things and people are what become the kings in my life. This is a reoccurring struggle.

The kings of my life, if I'm honest, all turn back to people and money. Money to be able to buy things so that people will want to be me (oh that makes me cringe even as I say that!). Like having no debt, being able to buy the perfect gift for people at all times, having trendy clothes, a perfectly manicured lawn and curb appeal to die for, a decorated house straight out of Country Living, a kitchen full of top of the line appliances and all organic ingredients to cook with, being able to eat out wherever and whenever we choose, going on vacation wherever we want. Do you understand where I'm coming from? Let me explain, some of these are passions of mine and can be good, but when those things are seated on the throne of my life, my life has no meaning; in a subtle way I become a walking zombie. Less gross and stinky I hope, but a zombie just the same.

Sure a lot of that stuff is for myself, making me the king of my life, but when I think about it, a lot of it is for others; to share with them, but also to impress in a way.

Thankfully because Christ always regains His thrown on my heart, the other kings are kicked off and true Peace reminds me once again who I need to be worshiping. And if I can think of no other reasons that day to worship Him, it's like my pastor says, because He deserves it.

Tomorrow I will sing joyfully to the King who is worthy. Worthy because of the victory that He won for Himself and for you and me.

I cannot wait to worship tomorrow with every cell of my being!

I hope you have much to celebrate with me.

On Friday a Thief.....

Today has been given to us to reflect on the death of Christ and how He took on the sins of all men. He experienced ridicule and pain, but most painful must have been God turning His face from Him for that time. He was left for 3 days in darkness to pay the debt that we owed for our evilness. With that act He gave us freedom if we only look to Him.

But it didn't end there. No. This sacrifice was not done in vain. He defeated death! That Friday, Satan was obliterated and Christ reigned victorious. He stayed in the grave for only 3 days. No more, and no less. When Mary and others came back to the grave the stone had been rolled away. He was no longer dead, but had risen giving us freedom and life, us being those who love and believe in Him; making us His sons and daughters!

This is not just some story, this is not some fairytale. This is truth. Read and seek it out for yourself (see John 19:16-20:18) . Whether you believe this miraculous gift of salvation that God gave to us or not, it is true and will forever be true. Hell and Heaven are real places where people will live in eternity.

Choose the narrow path towards Christ and your home will be a place of peace, security, and Life. Choose the path of lies and deception, that of Satan, and your home will be a place of pain, tears, and loneliness. (Sorry for the blunt delivery, no I'm not really, this calls for bluntness).

Christ drew me to Himself when I was 10. I will never forget the day when true joy took over my little life at church camp that year. Allow this year to be the year you will never forget, whether at church camp or in the shower. Christ can come whenever and wherever He chooses. Keep your eyes opened to Him.

On Friday Christ was a thief and on Sunday He was a King. Use this Friday to remember.

Adventures at Cedarmore

This past Sunday after church, our Lifegroup took a trip out to a campground called Cedarmore to cookout, play, fish and relax with all of our families. These are some of my favorite people and it was such a treasured time.

While the food was cooking on the grill we did a little fishing.

Well I didn't. Hooks in the mouths of slimy things kind of creeps me out; so I just watched.

Pretty sure we'll have to take Simms to do this again. He hasn't stopped talking about it.

He told some strangers about it yesterday. They just smiled, nodded politely as if they understood, and then looked at me like I have one strange kid.

I already ate my spicy brat that the guys grilled and forgot to take a photo amongst all the excitement, mainly from the goodness of the brat.

So just so you guys could see it I forced myself to eat another.

Salsa for the Wimpy at Heart

With my on-going Mexican addiction (I'm seeking therapy I swear!) I was craving chips and salsa and really didn't have the right ingredients to make my favorite Restaurant Style Salsa; so you know me, I improvised, the "Pennyless" way of course.

Welcome to my Black Bean and Corn Salsa extravaganza! You'll love it! It's easy, full of flavor and mild enough even for your wimpiest guests or kiddos, plus it's healthy! Pretty much a win, win!

Pennyless Black Bean and Corn Salsa

Ingredients:

1 can black beans, rinsed and drained

1 can Rotel

1 can white corn, rinsed and drained

1 tsp ground cumin

1 pinch of cayenne pepper (only if you can handle it!)

1 red onion, finely chopped.

1/2 lemon or lime freshly squeezed

salt and pepper

Directions:

Combine all ingredients in a large bowl. Mix well. Cover and chill for about an hour. Serve with tortilla chips. Told you it was easy!

Also works well as a relish.

Here's the chorus line. The lemon and salt and pepper are tardy.

Rinse the beans good.

I don't know the science behind it; just know you need to. So no grumbling, it has to be done.

Same thing with the corn.

Tear, sniff*, tear, sniff*

Add the can of Rotel. Love this stuff.

I always try to have it in my pantry.

Stock up on it when there's a sale.

Add lemon juice.

I would prefer lime, but this is all I had.

Salt and pepper it.

Add the cumin.

ONLY if you can handle it, add a pinch of Cayenne.

Mix, mix, mix.

Cover and chill for about an hour; if you can wait that long!

Ain't it purty?

Once You Pop You Can't Stop!

I've been wanting a snack lately. A snack that isn't too sweet, but not too salty, and a little spicy. It also couldn't be incredibly unhealthy because I'm trying to count calories. It sounds like I am picky about my snacks, but remember I have a refined pallet.

I searched my pantry and fridge for awhile and decided I didn't have anything that was going to satisfy. There were crackers, chips, cookies, but nothing that was going to fill that craving.

So after searching for several more minutes I decided I really wanted Party Mix; you know the kind with Chex Mix cereal. Well, of course, I didn't have Chex Mix, it couldn't be THAT easy (nothing seems to be lately), so I made up my own, maybe healthier version (you decide) of Party Mix. It's so good; fairly addicting, ok it's actually kind of like Pringles....."once you pop you can't stop"! I seriously couldn't stop. See if you can.

Once You Pop You Can't Stop Party Mix

(kind of obnoxiously long title, but it's mine and it works.)

Ingredients:

1 box Kashi Heart to Heart whole grain crackers

1 lb pecans

1 lb almonds

1-2 bags dried cranberries

1 stick butter/margarine, melted

1 tbsp Worcestershire or Liquid Aminos (that's what I had in my pantry)

1-2 tbsp Tony's Original Creole Seasoning

Directions:

This is super easy. Preheat oven to 325 degrees. Add Worcestershire to butter and mix well. Combine all ingredients, EXCEPT cranberries, in a large bowl. Mix well. Pour on a baking sheet. Bake for 25 minutes. Directly add cranberries. Combine and serve.

Pour pecans in a large bowl and begin to break up the crackers.

Pour in all broken crackers.

Add the almonds.

Melt the butter.

Mix in the Worcestershire.

Add melted butter mixture.

I'm no doctor, but this will not clog your arteries.

Don't be scared!

Add the seasoning! This will give it a nice kick.

If you can handle it, add the entire 2 tablespoons.

Mix real good. Get your hands dirty!

Or you can use a spoon if you must!

Pour on a baking sheet.

Spread out the mixture evenly.

Bake for 25 minutes. Your house will thank you for the smell.

When the timer beeps, add your dried cranberries.

They add the perfect amount of sweetness.

Then dig in! No need to wait!

Bet you won't be able to stop. Come on, bet me!

What happens when the chicken crosses the road....

So if even if you have only read this blog a couple of times you know that I am a freak for Mexican food; completely addicted. Seriously, I think I might need to go to rehab. Whenever I get ready to eat Mexican I tend to get shortness of breath and start to sweat a little. It's the embarassing truth. From my favorite local, authentic Tex-Mex joint Chuy's to Taco Bell. Not kidding. I could live off of Mexican. So thanks to inspiration from Ree's brother I did my version of his Chicken Tacos.

These are a hot mess, but totally worth it! I promise. Just get somebody else to clean up afterwards. Thankfully, Matt offered to do to the dishes. Even though there were splashes of oil still on the counter the next morning, it was worth not being a control freak to have him clean up after this meal.

Chicken Chulupas

Ingredients:

3 boneless, skinless chicken breasts

1 can Rotel

1/2 cup white corn

1 small red onion

2 cups shredded sharp cheddar cheese

lettuce, shredded

1 tbsp chili poweder

1 tsp cumin

1 tsp oregano

1/2 tsp cayenne pepper

salt and pepper

16 corn tortillas

Canola Oil

Hot Sauce

Directions:

Add about 2 tablespoons of Canola Oil to a hot pan on medium heat. Add chopped onion. Saute till tender. Add chopped chicken that has been seasoned with cumin, cayenne, oregano, chili powder, and salt and pepper to pan with onion. Saute till chicken is cooked completely through. Add Rotel and corn. Cover and cook till liquid has evaporated, about 15 minutes.

Use a deep skillet and fill with Canola Oil about 2 inches deep on medium to high heat.

Fill tortillas with chicken mixture and gently clasp it shut with a pair of tongs. Place in hot oil and fry for about 3-4 minutes or until golden brown. Fill chalupa with cheese, lettuce, and hot sauce.

My mouth is watering.

Here's the chorus line; the chicken must be crossing the road some where.

Chop that onion *tear, sniff, tear, sniff*

Add oil to your hot pan.

Saute till tender.

There you are! It seemed to have made it back to the other side.

Sorry buddy. Maybe you shouldn't have crossed the road.

Season to death. Literally.

I hope you don't have a pet chicken or work for PETA; I'm sorry if you do.

Cook that chicken all the way through.

Add your Rotel.

Next, the corn.

Mix together so everyone gets real happy.

Cover till liquid has evaporated.

Fill your tortilla with a couple of spoonfuls of this deliciousness.

Now here comes the good part. Fry that baby!

Let oil drain off on a paper towel.

Wrap it up in a paper towel to get off any access oil.

Fill 'em up with your favorite toppings.

Get ready to have an experience.

So good! You gotta try these.

WARNING: You may have shortness and breath and hot sweats due to excitement. Eat with caution.

Weird Craving

I had the weirdest craving for lunch and I couldn't put a finger on it until I saw this in my pantry....

See the light shining down on it perfectly, almost angelic-like. It HAD to have been a sign from the Lord. The girl in the yellow sombrero was definitely beckoning me. So I listened, and here is what I made.

Remember people this is The Pennyless Cook*.

Ground Cumin; my absolute favorite Mexican ingredient.

Add a teaspoon of Cumin. Mix well.

Top corn tortilla with seasoned beans and freshly grated sharp cheddar cheese.

Pop under the broiler for 2-3 minutes.

The best hot sauce in the world! Sriracha Hot Chili Sauce, you can find it in the Asian aisle at the grocery.

Now it's SPICY so if you're a wimp don't even bother.

Bean and Cheese Burritos with Hot Sauce.

I had to make it look kind of gourmetish.

I know, not earth-shattering by any means, but it hit the spot.

Carrots and Lamb Testicles

So this is my go-to vegetable to bring to any and every potluck-like gathering. One, because it's an easy no fuss dish to bring. Two, because it's ultra cheap. Three, because it's tasty. The dish is my Momma's carrots. I know what you're thinking. Carrots! Come on, that is SO incredibly boring. But these ain't yo momma's carrots; these are MY Momma's carrots and MY Momma ain't yo momma so no judging! Now that that's out there I can continue....

I grew up watching my Momma cook from a distance; she was incredibly particular about cooking in her kitchen. We would sit down for dinner at 5:30 PM promptly as a family every night without fail. When I was in school I could tell you what my friends were having for dinner by what day of the week it was. Like Monday was meatloaf, Tuesday tacos, Wednesday spaghetti, Thursday leftovers, Friday was always pizza; you get the picture.

At my house, however, I couldn't tell you what we were having until my Momma posted that menu for the week. We rarely had the same meal twice (which is what I attribute to my adventurous, yet refined pallet), we always had to try everything placed in front of us (including those lamb testicles that one time; NOT kidding folks!), and we didn't get to ask what it is she has placed in front of us until we have tried it (including those lamb testicles).

When we were dating, Matt, who grew up eating similar to my friends (known as normal) did not know what to do with himself when he sat down to eat with us. I think the first time Momma made him some kind of frittata with a three-cheese mornay sauce. He loved it, don't get me wrong, but it was definitely out of the ordinary for this guy. That was kind of tame meal for me; hence the lamb testicles.

So when I share with you this recipe for my Momma's carrots just hold on tight 'cause even though they are just carrots, they will not taste JUST like carrots when you're done.

Thanks Momma, even for making me eat those testicles.

Momma's Spicy Roasted Carrots

Ingredients:

1 lb bag baby carrots

2 tbsp olive oil

2 tbsp Creole seasoned salt (Please use Tony Chachere's Original Creole Seasoning, I'm begging you!)

1/2 stick unsalted butter, melted

Directions:

Preheat oven to 350 degrees. Pour carrots in a large mixing bowl. Toss with olive oil, butter, and seasoned salt. Spread out evenly on a baking sheet. Roast for 30-45 minutes.

Here's the chorus line.

Pour on the olive oil.

Then the melted butter.

And introducing for the first time with carrots....

Tony's Original Creole Seasoning!

This stuff (like it says on the label) is so good on practically everything. We use it on chicken, pork chops, and pasta just to name a few.

Toss together.

Roast to perfection. So good!

Nothing like those lamb testicles.
