Weird Craving

I had the weirdest craving for lunch and I couldn't put a finger on it until I saw this in my pantry....

See the light shining down on it perfectly, almost angelic-like. It HAD to have been a sign from the Lord. The girl in the yellow sombrero was definitely beckoning me. So I listened, and here is what I made.

Remember people this is The Pennyless Cook*.


Ground Cumin; my absolute favorite Mexican ingredient.


Add a teaspoon of Cumin. Mix well.


My tortillas.

Top corn tortilla with seasoned beans and freshly grated sharp cheddar cheese.


Pop under the broiler for 2-3 minutes.


The best hot sauce in the world! Sriracha Hot Chili Sauce, you can find it in the Asian aisle at the grocery.

Now it's SPICY so if you're a wimp don't even bother.




Bean and Cheese Burritos with Hot Sauce.

I had to make it look kind of gourmetish.

I know, not earth-shattering by any means, but it hit the spot.

Carrots and Lamb Testicles

So this is my go-to vegetable to bring to any and every potluck-like gathering. One, because it's an easy no fuss dish to bring. Two, because it's ultra cheap. Three, because it's tasty. The dish is my Momma's carrots. I know what you're thinking. Carrots! Come on, that is SO incredibly boring. But these ain't yo momma's carrots; these are MY Momma's carrots and MY Momma ain't yo momma so no judging! Now that that's out there I can continue....
I grew up watching my Momma cook from a distance; she was incredibly particular about cooking in her kitchen. We would sit down for dinner at 5:30 PM promptly as a family every night without fail. When I was in school I could tell you what my friends were having for dinner by what day of the week it was. Like Monday was meatloaf, Tuesday tacos, Wednesday spaghetti, Thursday leftovers, Friday was always pizza; you get the picture.
At my house, however, I couldn't tell you what we were having until my Momma posted that menu for the week. We rarely had the same meal twice (which is what I attribute to my adventurous, yet refined pallet), we always had to try everything placed in front of us (including those lamb testicles that one time; NOT kidding folks!), and we didn't get to ask what it is she has placed in front of us until we have tried it (including those lamb testicles).
When we were dating, Matt, who grew up eating similar to my friends (known as normal) did not know what to do with himself when he sat down to eat with us. I think the first time Momma made him some kind of frittata with a three-cheese mornay sauce. He loved it, don't get me wrong, but it was definitely out of the ordinary for this guy. That was kind of tame meal for me; hence the lamb testicles.
So when I share with you this recipe for my Momma's carrots just hold on tight 'cause even though they are just carrots, they will not taste JUST like carrots when you're done.

Momma's Spicy Roasted Carrots




Ingredients:
1 lb bag baby carrots
2 tbsp olive oil
2 tbsp Creole seasoned salt (Please use Tony Chachere's Original Creole Seasoning, I'm begging you!)
1/2 stick unsalted butter, melted

Directions:
Preheat oven to 350 degrees. Pour carrots in a large mixing bowl. Toss with olive oil, butter, and seasoned salt. Spread out evenly on a baking sheet. Roast for 30-45 minutes.


Here's the chorus line.


Pour on the olive oil.


Then the melted butter.


And introducing for the first time with carrots....


Tony's Original Creole Seasoning!

This stuff (like it says on the label) is so good on practically everything. We use it on chicken, pork chops, and pasta just to name a few.


Toss together.


Roast to perfection. So good!

Nothing like those lamb testicles.

Breakfast in a Casserole

I love casseroles.

The End.

Well it's not really the end it's only the beginning of a delicious journey that this casserole will take you on. I know that's cheesy, but so is this casserole. And seriously good.
This casserole can be made ahead of time, and it's actually better that way. Also it's, of course, delicious and super easy.


Overnight Breakfast Casserole


Ingredients:
6 eggs
1 cup milk/cream
2 cups sharp cheddar cheese
6 thick slices of bread (Texas Toast is my bread of choice)
1 tsp salt and pepper
pinch of cayenne pepper
3 tbsp butter (or more of course)

Directions:
Make this the night before. Butter the casserole dish. Cover the bottom of the dish with bread that has the crust already cut off. Feel free to use your favorite sandwich bread as well, but just double it for thickness. Cover with cheese. Sprinkle with butter that has already been diced on top. Whisk eggs with milk and seasonings. Pour on top. Cover and let sit overnight.
Preheat oven to 350 degrees and bake for 30 minutes the next morning. Sit back in your pj's and relax.

This dish is also incredible with crumbled sausage, bacon, and green onion, but the above recipe is definitely as Pennyless as you can get, which is just my style.



Butter your casserole dish. Don't be scared it's only butter. Paula Dean would be proud.


Cut off the crust.





Cover the bottom with bread.


Grab your cheese.


Shred it like you mean it!


Cover it with cheese.

Add the butter.


Fresh from the farm.


Whisk the eggs with salt and pepper.


Add a dash of cayenne.


Whisk some more for good measure.


Pour on the egg.


Cover it.

Good night, sleep tight, don't let the bed bugs bite.


Good morning! This was baked at 350 degrees, uncovered for 30 glorious minutes. I recommend staying in your pj's during this time.

The Pennyless Life: "Nail Biter Dilemma"

Think it's time to try a new color?


I dunno, I do like it, but it's chipping already.




Does this mean I am not a content person if I want to change the color this early in the game? Don't answer that.
This was a stretching exercise for me, and now that I have been stretched I think it's time to paint them a different color.
At least this is not how I am with the walls on my house, although I maybe would be with more money and time......
I think I'm going to stick with the metallic color spectrum. No not on my walls; on my nails.
